Now, the Recanto dos Flamingos and Quiosque Tropicana restaurants are focusing on traditional cuisine from the Triple Frontier!

The two restaurants have been offering a variety of meals and snacks for a long time, but when chef Massimiliano Casu arrived, the restaurants' cuisine received some upgrades focused on improving the experience of Park visitors!

Massimiliano was determined to transform meals, such as salads, burgers, portions or typical foods, etc., according to the times and seasons of the year, increasingly taking advantage of local ingredients and products produced by the region itself!

Native Gastronomy and use of PANCs:

To involve the visitor in the culture linked to the dish they taste, Casu, the chef, introduced unconventional food plants (PANCs) into the cuisine, using edible wild herbs rich in nutrients such as ora-pro-nóbis, taioba, sorrel and more!

Relying on a small production of PANCs, sometimes placing them in some ingredients of the dishes served, the chef also reveals:

“PANCs have always been present in Brazilian cuisine, but they are not consumed frequently because many are not aware of them. When we sharpen a person’s sensations, we incorporate new habits and generate consumption through the experience acquired.”

Recognizing local cuisine:

As we mentioned, the dishes are produced from local producers, as valuing regional culture and economy is the main focus of haute cuisine at Parque das Aves!

Where according to the administrative director of Parque das Aves, Jurema Fernandes:

“Prioritizing local producers guarantees us fresher, healthier food, strengthens the region’s economy, generates less trash and waste and preserves rural spaces.”

Thus, agriculture in the western region of Paraná is one of the main factors sustainability of the regional economy, an example of this would be our traditional draft beer, which is handmade by the producers themselves in Foz do Iguaçu and the region!

Lowering meat usage:

With an old idea of reducing the consumption of meat, Parque das Aves adopted a process to reduce the number of meat used in its dishes, the reason for this is the concern with the deforestation made for raising livestock. The main intention of this idea is to keep the least amount of meat on the menu as possible, even going as far as zero.

But such a change greatly requires public cooperation and participation, in addition to the need for better environmental education, explaining the importance of considerably reducing meat consumption!

Still on this, Massimiliano Casu comments:

“A large part of our menu still consists of meat products, but we have already added many vegetarian products that have been approved by our visitors. For example, we have black rice burgers, and another with mushrooms, spaghetti al pomodoro and tapioca cubes, as well as our incredible jackfruit meat drumstick, which is a bestseller.”

In addition to being a very cool idea, since Parque das Aves always defends conservation of one of the most devastated forests in Brazil, the Atlantic forest, this idea of reducing meat consumption helps not only this forest but also many others at risk in our country!
